What is the Merroir?

The merrior is the environment the oyster grows in. An oyster’s merroir is completely unique – as little as a mile away will be totally different – and comprises of five factors.

What is “Off-Bottom” Cultivation?

As the name suggests, off-bottom oysters are raised in baskets suspended close to the water’s surface.

Because they’re not scattered in an oyster bed over a reef like wild oysters, caring for and harvesting off-bottom oysters is far more efficient.

Benefits of Off-Bottom Cultivation:
  • Off-bottom oyster farmers pick the very best waters for their oysters.
  • All their oysters are raised in the same location – “merroir” – their taste is always the same.
  • Water flowing around the oyster baskets flows more quickly than over oyster beds.
  • Greater water flow → more feeding → plumper oysters

Each oyster filters up to 50 gallons of water per day, growing stronger and plumper as a result. The controlled environment ensures all oysters share the same merroir, yielding consistent flavor and appearance — essential for chefs and oyster lovers alike.

At Isle Dauphine, nature is perfected with science. Founder Doug Ankerson, an engineer by background, applies a highly methodical, science-driven approach to oyster farming.

    • The entire farm is engineered to withstand hurricanes and tides, ensuring sustainability.
    • Oysters are bred using triploid technology – a process that makes them sterile and non-spawning, keeping them plump all year round.
    • In collaboration with Auburn University, Isle Dauphine selectively breeds oysters with the most desirable traits.
    • Oysters are raised in dedicated hatcheries, then carefully moved and “tumbled” to encourage thicker shells and a high-quality finish.
